Pollo Mediterraneo
(4 servings)

 

Ingredients:

4 skinless and boneless chicken breasts (cut into chunks)
1 tbsp olive oil
1 tbsp butter

 

Seasoned flour:

2.5 dl (1 c)
flour
2 tsp salt
0.5 tsp black pepper
1 tsp dried oregano
1 tsp dried thyme
0.5 tsp garlic powder

 

Pasta:

500 g (1 lb) spaghetti or pasta of choice
1 tbsp olive oil
1 tbsp butter
1 yellow onion (finely chopped)
3 cloves of garlic (grated or finely chopped)
2 tsp fresh or frozen parsley (finely chopped)
1-2 tsp fresh chives (finely chopped) for garnish
2 tbsp fresh lemon juice

 

1. In a medium bowl, combine flour, herbs, salt, pepper, and garlic powder.
2. Put the chicken and seasoned flour in a plastic storage bag and shake until evenly coated. Shake off excess flour.
3. Bring a large pot of water to a boil, add 1-2 tsp of salt, and cook the spaghetti according to the package instructions.
4. Heat oil and butter over medium-high heat in a large nonstick skillet.
5. Put the chicken in the pan and fry it until golden brown. Fry the chicken in batches because you don’t want to crowd the pan…
6. When the pasta is ready, drain and set aside for a couple of minutes.
7. In the same pot the pasta was cooked in, heat the oil and butter over medium-high heat.
8. Add the onion and garlic and cook until tender.
9. Add parsley and lemon juice.
10.Put the pasta back in the pot and toss until well coated.
11.Serve with extra lemon juice for the chicken and sprinkle chives on top.

 

(Tip: Grated grana padano or parmesan cheese is a perfect topping!)
