This is a very easy meal that you can make for breakfast, lunch, brunch or dinner…What time you eat/serve it is entirely up to you! It doesn’t take long to prepare either and it is very filling so you won’t find yourself with the munchies half an hour later… 🙂
(2 servings)
Ingredients:
4 medium sized potatoes (peeled and cut into 1.5 cm/0.5 in thick strips)
6 eggs (beaten with 1 tsp salt and 0.5 tsp black pepper)
1 large red onion (finely chopped)
1 tbsp olive oil
1 tsp dried oregano
1 tbsp fresh or frozen chives (finely chopped)
1. Heat oil in a large skillet.
2. Fry potatoes and onion until potatoes are golden brown and onion is tender.
3. Season with oregano and more salt and pepper if desired.
4. Pour beaten eggs over potatoes and onions and cook until eggs are set and a little crispy around the edges, stirring occasionally to scramble them.
5. Sprinkle chives on top and serve immediately.
(Tip: Add some crumbled feta cheese to the pan before pouring the eggs over everything for extra saltiness and tanginess. But omit the extra salt in step 3.)
I love Greek food but I’ve never had this wonderful recipe. This is similar to something my mom makes but different. I am loving this recipe and I am hungry all at the same time lol. Gotta write this one down too. Thanks for sharing this 🙂 .. I love that we are two Jersey girls.

My grandmother used to make this for me when I was little and she still makes it for me when I visit her in Greece. It’s so delicious and it’s quick and easy to throw together! 🙂
I know, I still can’t believe that you’re a Jersey girl too! It’s a small world! 🙂

I love your blog.
I love almost all of your breakfast ideas.
I believe one could eat breakfast morning, noon ‘and’ night.
I do have one question though. Since I only know what looks and tastes good. (to me) Might someone clue me in as to what makes this ‘Greek’?
I must admit this is more like ‘Great Food’
Thanks to all, from someone who loves food, but lacks the formal training.

Thank you so much for your kind words! 🙂 Oh, yeah, I totally agree…you can have breakfast for lunch or even dinner…especially omelettes, frittatas, scrambles and other egg-based meals!
What makes this “Greek” you ask… Well, it’s a popular meal in Greece, especially in my family…There are many variations of this dish, but this is the way my grandmother made it for me when I was a kid, the way my mother makes it and how I make it! It also has ingredients usually found in Greek dishes such as oregano and olive oil…and you can even add feta cheese to the mix…and there you have it. 🙂

When my Greek boyfriend and I split up, oddly enough the thing I missed the most was his eggs and potatoes. I tried this and let me tell you, I don’t know wether to love you fur this wonderful recipe or hate you for making me think of him( just kidding). All that is missing is a squirt of lemon juice. Thank you so much for this.

*LOL* Thank you so much for your comment and the positive feedback! It made me smile! I have never tried this with lemon juice, but I’m sure that it would give this dish that extra little kick! Good thinking! 🙂 Please come by again!
